Method
- Preheat the oven to 180°C (350°F) conventional mode and line a baking sheet with parchment paper.
- Soak the raisins in warm water for about 10 minutes to soften them, then drain and squeeze out excess water.
- In a large bowl, mash the banana with a fork until it becomes a smooth puree without large lumps.
- Peel the apple and grate it finely using a medium-hole grater; immediately add it to the banana with lemon juice to prevent browning.
- Add the rolled oats, drained raisins, and cinnamon to the fruit mixture.
- Mix thoroughly and let the dough rest for 5 minutes, allowing the oats to absorb the moisture from the fruit.
- Using a spoon, take about 25-30g of the mixture and form 15 small balls, placing them on the baking sheet spaced apart.
- Lightly flatten each ball with the back of the spoon to create a cookie shape (about 1 cm thick).
- Bake on the center rack for 15-18 minutes, or until the edges are lightly golden but the center remains soft.
- Remove from the oven and let cool completely on a wire rack before serving to allow the texture to set.
