Method

  1. Peel the apples, dice two of them and slice the third one thinly, tossing them with lemon juice to prevent browning.
  2. In a large bowl, sift the flour and baking powder together, then stir in the brown sugar, salt, and grated lemon zest.
  3. In a separate container, create an emulsion by whisking the soy milk and sunflower oil together.
  4. Gradually pour the liquid mixture into the dry ingredients, whisking by hand until the batter is smooth and lump-free.
  5. Fold the diced apples and cinnamon into the batter using a spatula with gentle bottom-to-top movements.
  6. Grease and flour a 22-24 cm cake pan and pour the mixture in, leveling it evenly.
  7. Decorate the surface by arranging the apple slices in a radial pattern, pressing them slightly into the batter.
  8. Bake in a preheated static oven at 180°C (350°F) for about 45-50 minutes, checking doneness with a toothpick in the center.
  9. Remove from the oven and let the cake cool on a wire rack for at least 20 minutes before removing from the pan.
